Indian fusion vegan dish inspired from aloo ki tikki, a popular Indian dish featuring crisp fried lentil and potatoes. “Growing up in Delhi, aloo ki tikki was one of my favourite foods to eat anytime of the day. I have taken this as an inspiration and played with some tart and earthy elements. This dish is paired with roasted tomato and onions, kumara & corriander salad with panfried artichokes. The two sauces accompanying are imli ki chutney (tamarind and date chutney) and pudina ki chutney (mint & corriander chutney) to give a delicious sweet & sour effect.
