Koko Laisa


Chocolate Rice Pudding

Oldie but a goodie in every Samoan family home. You can have it at any time of the day. It goes great with crackers or bread with block butter. Very delicious and affordable to make.

Recipe: Gwen Leiatua              Serves: Four People


  • 3 cups water

  • ½  grated Koko Samoa (Samoan cooking chocolate)

  • Brown or white sugar (to taste)

  • 400 ml coconut milk or 1 cup of freshly squeezed coconut milk.

  • 2 cups of medium or long grain rice

  • 3 – 5 washed and dried lemon leaves (optional)



  1. In a large pot combine rice and water. Bring to boil then cook for around 20mins or until almost cooked.

  2. Add the desired amount of sugar.

  3. Add the grated Koko Samoa to the pot making sure it is fully mixed into the liquid.

  4. Simmer on a medium heat until cooked – stir occasionally to avoid rice sticking to the bottom.

  5. Stir in coconut milk or freshly squeezed coconut milk. 

  6. Add 3-5 washed lemon leaves to add aroma and boost flavour (optional). 

  7. Remove from heat. The Koko Laisa should resemble a thick soup. 

  8. Divide into bowls and serve warm.


Can be saved in fridge and reheated - Enjoy!
